Is whipped icing bad to use on a wedding cake?

My boyfriend likes whipped icing, and that was his only stipulation on any "future" wedding cake that we may have. However, whipped icing has to be refrigerated, so I thought it would be a bad idea. Are there any "bakers" out there who might know more about this?

It's best to ask your baker. Many of the whipped frosting they use are actually non-dairy. but even if it wasn't I wouldn't worry about it. It's only going to be sitting out for a few hours.
Reply:Whipped icing can be used on wedding cakes. However, it depends on how decorated you want your cake to be. Most bakers/cake decorators use fondant to cover cakes so that the cake is smooth. They then decorate from there. You should probably talk to a baker and see if there's a way that they can use whipped icing and still have the cake decorated the way you want it.

Bascially if you want whipped icing on a cake you have to limit the amount of decoration and keep the cake refrigerated for as long as possible.





Heat will deflate the whip making the cake saggy and ugly. Its not the best choice for an outdoor summer wedding but otherwise you will be able to work around it.





When the time comes, talk to the bakers in your town about your options. Those who do tons of wedding cakes will have done it before and will have suggestions.
Reply:There was a fabulous bakery near our old house in California, who used NO buttercream on any of their cakes (yay!) ... The used only whipped cream or whipped fudge (white or chocolate). They had a spectacular wedding cake that they did, with whipped cream and whole strawberries on it...
