Whats the best icing to use to decorate a wedding cake?

I'm planning on making my own wedding cake but I'm not sure what the best things are to use to decorate it. I'm going to make four chocolate, heart shape tiered cakes and decorate them with flowing sugar roses if I can find out what to use

2 lb. powdered sugar, sifted


1 1/2 c. Crisco


1 tsp. salt


1 tsp. butter flavoring (McCormick's)


1/2 c. milk





Beat until mixed thoroughly.

WHITE WEDDING CAKE ICING





1/4 stick butter, room temperature


3/4 c. cool water


Sprinkle of salt


1/2 tsp. vanilla flavoring (or coconut)


2 lbs. powdered sugar


1 c. solid white Crisco





Add butter, water, salt, vanilla and 1 pound of the powdered sugar. Beat well with mixer. Add Crisco and beat. Add the other pound of powdered sugar or until desired consistency. Tint with food color. Add a little more powdered sugar if you want to make roses.
Reply:Normally royal icing would be used - but thats on traditional fruit cakes. For chocolate sponges I would use fondant and make your sugar roses with that too. Have a great day.
Reply:you could make chocolate marzipan to cover the cake then put ur roses etc.

Reply:Not fondant because most people don't eat it even though they think it looks pretty. Royal icing is ok for tiny accent decorations but most don't eat it, especially over a large surface since it hardens, and most folks at least in the US are used to soft icing. Either do buttercream or cream cheese or even chocolate buttercream icing.
