What's the best way to preserve a wedding cheesecake? Can I keep it on display during the reception?

This is for my friend's wedding and we don't know if the cheesecake will stand safely against the time it will be on display ie: How long can we keep it out for before it melts?


We don't know yet if it will be home made or if we'll get it from a baker.

What's the best way to preserve a wedding cheesecake? Can I keep it on display during the reception?
I would think that the Cheesecake will hold up well during the festivities but refrigerate it as soon as possible afterwards. Actually, it depends on what type of Cheesecake it is and what ingredients are in it. If it has any fresh fruit in it, I would say 2 hrs. display, then refrigerate immediately and it should hold freshly for about 2 weeks. I personally, don't recommend freezing cheesecake.........but that's just me talking, there are several commercial brands of Cheesecake that hold up well in the freezer. And, your cheesecake should not melt, either from the baker or a homemade version.
