What is the best and right preservative to add to my birthday and wedding cakes so they stay fresh for a long time without getting spoit. I tried using brandy, it seems not to be working.

I would not put any preservative in your cakes. The way to do it is to bake the cakes and put a "crumb layer" of icing on the cakes and then freeze them - if they are not going to be used for a long time. The icing seals in the moistness of the cake. Just make sure that after applying the layer of icing you let it harden thoroughly and then cover well with wrap and preferable a zip-lock bag to keep out any smells that may come from your freezer. Things like brandy are going to alter the natural taste of a good homemade cake. Hope that helps!
Reply:I've found that adding applesauce to cakes makes them last longer and they stay a lot softer even if they are frozen and thawed out. Plus it's a lot more healthy
